The first time we got these steaks back from the butcher, we genuinely thought they were Porterhouses that had been mislabeled. The marbling was impressive enough, but the amount of Filet on these T-bones really caught us off guard.
So we called the butcher.
Nope. Just exceptionally good T-bones.
Cut from our dry-aged, grass-finished British White beef, these steaks deliver the best of both worlds: the rich flavor of a New York Strip on one side and tender Filet on the other. Big flavor, beautiful marbling, and the kind of steak that makes you slow down while you eat it.
Okay… maybe that wasn’t very humble after all.
This recipe by NY Times Cooking spices up (literally) T-Bones on the grill (not that they need it even a little bit); an awesome way to take our dry aged T-Bones and bring a little spice to the party.
