Beef heart is one of the most underrated cuts on the animal. Lean, rich, and surprisingly tender when prepared right, it delivers a deep beef flavor with a smooth texture that catches a lot of people off guard.

Slice it thin for quick-seared heart steaks, marinate it for tacos or kabobs, or smoke it low and slow — one of our favorite ways to prepare it. If you enjoy exploring traditional cuts and old-school cooking, this is one worth trying.
