Despite its name, Pork Butt comes from the upper shoulder of the hog, and it's the undisputed champion of low-and-slow cooking.
Beautiful marbling and abundant connective tissue transform over hours of gentle heat into unbelievably tender, juicy pork that's perfect for pulled pork sandwiches, tacos, carnitas, barbecue, chili, and countless leftover meals. When the shoulder blade bone slides free with almost no effort, you'll know it's ready.
Raised outdoors with room to roam, root, and wallow, and fed certified organic feed, our pigs are given the time to develop exceptional flavor before becoming part of our Annual Pork Harvest.
We harvest just three hogs each year, making every Pork Butt a limited opportunity. Once this year's harvest is spoken for, there won't be another until next year.
